Lemon Sugar Cookies

Lemon Sugar Cookies

1 cup  sugar, plus additional for cookie press
1 cup powdered sugar
1 cup butter (2 sticks)
1 cup vegetable oil
2 eggs
1 1/2 tsp.  lemon extract (or almond or banana)
1 tsp.  vanilla
5 cups  flour
1 tsp.  baking soda
1 tsp.  cream of tartar
¼ tsp.  salt

Combine sugars, butter, oil, eggs, lemon extract and vanilla.  Add flour, baking soda, cream of tartar and salt.  Mix well.
Using cookie scoop, drop dough into greased cookie sheets.  Use a cookie press or the bottom of a glass and dip it into sugar, then gently press and slightly flatten cookie. 
Bake at 375         9 – 12 minutes
Until edges slightly color.
